Basil Garlic Butter Pasta
A pantry pasta with nothing to hide behind: basil garlic butter olive oil, Parmesan, and the water the pasta cooked in.

Ingredients
- 1 lb spaghetti or linguine
- 5 tbsp Basil Garlic Butter Olive Oil, divided
- 4 cloves garlic, thinly sliced
- 1/2 tsp red pepper flakes (optional)
- 1 cup freshly grated Parmesan, plus more to serve
- 1 tsp salt, plus more for the pasta water
- 1/2 tsp black pepper
- 1/2 cup fresh basil, torn
Let’s make it
- Cook the pasta in well-salted boiling water until just shy of al dente. Reserve 1.5 cups of pasta water before draining.
- In a wide skillet over medium-low, warm 4 tbsp Basil Garlic Butter Olive Oil with the garlic and red pepper flakes for 2-3 minutes, until the garlic is soft and pale gold. Do not let it brown.
- Add 1 cup of the pasta water to the skillet and bring to a brisk simmer.
- Add the drained pasta and toss constantly for 2 minutes, adding more pasta water as needed, until the liquid turns glossy and clings.
- Off the heat, add the Parmesan in three additions, tossing hard between each, until the sauce is creamy.
- Finish with the last tablespoon of oil, the basil, salt and pepper.
Why it works
Tossing the pasta hard in starchy water and oil is what emulsifies them into a sauce. Adding the cheese off the heat stops it seizing into strings.
The OTM finish
A final tablespoon of Basil Garlic Butter Olive Oil over the bowls, added after the cheese.
Make it your own
Add halved cherry tomatoes with the garlic, fold through peas or spinach at the end, or top with the ten-minute shrimp.
Quick tip
Salt the pasta water properly. It is the only chance to season the pasta itself.
